what to eat when on a diabetic & low sodium diet?

i keep finding diets, recipies, dishes that are either diabetic or low sodium. i have been reserching for months, i need help on finding recipes mostly.
P.S. when i say "EITHER" I mean Either.

Diabetic Recipes

I have a relative who has been recently diagnosed as being diabetic (type 2, i believe). So, I need some diabetic recipes (or recipe sites) suitable for a vegetarian/ vegan diet.

If I can google for it, so can you.

Honestly, its better you consult a specialist to find out what’s best for you. I really want to help but I don’t think I can give better answers than specialist do. Sorry.

good luck

Love is omnipresence, Love is patient, love is kind. It does not envy, it does not boast, it is not proud. It is not rude, it is not self-seeking, it is not easily angered, it keeps no record of wrongs. Love does not delight in evil but rejoices with the truth. It always protects, always trusts, always hopes, always perseveres. Love never fails.

anyone have good recipes for a pregnant diabetic?

my fiance and i are having a baby and she is diabetic. the doctor gave us a new diet for her that say she has to stay under 2000 calories a day to keep her sugars where they are supposed to be. she loves sweets and junk food so this is hard for her. i need some good recipes of things i can make for her but are still in her diet.

She needs to eat lean protein and whole grain carbohydrates. Check out some of Ellie Krieger’s recipes on the Food Network. There are a lot of healthy recipes there. Most of us would be healthier and thinner if we ate more like a diabetic person is required to- if you want to know the truth.

In general, your fiancée needs to watch her fruit intake and eat the fruits high in fiber, like apples, pears and strawberries. This is the time to really read labels and evaluate the fiber content of foods. Obviously more fiber the better. This really helps to stabilze blood sugar, curb the appetite and ease constipation, which is bound to happen in pregnancy at some point. One caution though- since she loves sweets, don’t let her be tempted to eat sugar-free baked goods and candies. They may not cause her blood sugar to spike but the artificial sweetner is not good for the baby.

Any Diabetic Dessert recipes without nuts or seeds?

I’ve agreed to bake for my Grandparents 80th and 90th Birthday party. I need to bake for about 300 people and am running into road blocks with diets and allergies in the family. They cannot include nuts or seeds.

Banana Honey Muffins:

Ingredients:
1 cup wholemeal self-raising flour
1 cup self-raising flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 cup raw sugar
1/2 cup rolled oats
1 cup mashed banana
1/4 cup honey
1/4 cup extra-light olive oil
2 eggs, lightly whisked
1/3 cup low fat plain yoghurt
1/4 cup shredded coconut, toasted

Method:
Preheat oven to 390°F. Lightly grease a 12-hole 1/3-cup capacity muffin pan.
Sift flours, baking powder and cinnamon into a bowl. Stir in sugar and rolled oats. Make a well in the centre.
Whisk banana, honey, oil, egg and yoghurt in a jug. Pour into well. Gently fold until just combined. Three-quarter fill muffin holes with mixture. Bake for 15 to 20 minutes or until a skewer inserted into the centre comes out clean. Stand for 5 minutes in pan. Turn onto a wire rack.
Sprinkle with toasted coconut. Serve warm.

Lime Cheesecake:

Ingredients (serves 12)
15 (120g) shredded wheatmeal biscuits
50g reduced-fat spread, melted
200g diet peach and mango yoghurt
250g reduced-fat smooth ricotta cheese
2 teaspoons finely grated lime rind
1 egg
2 tablespoons caster sugar
1/4 cup wholemeal plain flour
chopped fresh fruit, to serve

Method:
Preheat oven to 350°F/320°C fan-forced. Grease a 1 inch-deep, 9 inch (base) loose-based fluted tart pan. Process biscuits until they resemble fine breadcrumbs. Add spread. Process until combined. Press mixture over base of prepared pan. Place pan on a baking tray and refrigerate until required.
Using an electric mixer, beat yoghurt, ricotta, lime rind, egg, sugar and flour on low speed until smooth. Pour mixture over biscuit base. Bake for 30 minutes or until just set and edges are light golden. Remove from oven. Cool in pan. Cover and refrigerate overnight or until cold. Serve with chopped fruit.

Raspberry and Honey Semifreddo:

Ingredients (serves 8)
3 eggs
60ml (1/4 cup) honey
520g (2 cups) low-fat vanilla yoghurt
190g (1 1/2 cups) raspberries
1 x 250g punnet strawberries, washed, hulled, halved
2 tsp powdered sugar, sifted

Method:
Use an electric beater to beat together the eggs and honey for 5 minutes or until pale and creamy. Stir in the yoghurt.
Line the base and 2 long sides of a 1.5L (6-cup) capacity loaf pan with plastic wrap, allowing the sides to overhang. Pour in the egg mixture and fold over the plastic wrap to cover. Place in the freezer for 2 hours or until almost set.
Use a fork to mash 125g (1 cup) raspberries in a bowl. Swirl raspberry through the semifreddo. Cover and freeze overnight.
Transfer the semifreddo to the fridge 20 minutes before serving to soften slightly. Combine strawberries, icing sugar and remaining raspberries in a bowl. Turn semifreddo out onto a plate. Remove plastic wrap. Cut into slices and divide among serving plates. Top with the strawberry mixture to serve.

Good luck.
